
Pomegranate Kale Salad

Vanessa Packer and Nicole Berrie, founders of Bonberi, created this superfood-packed salad, which is essentially food for the skin. Read below as Vanessa and Nicole describe the health benefits of the salad’s key ingredients, then give the recipe a try.

Pomegranates:
Packed with antioxidants, pomegranates are the ultimate superfood! Hailed for their anti-aging properties, they promote collagen and elasticity as well as skin regeneration and sun protection against free radicals.
Kale:
Loaded with Vitamin C and copper, the two work together to control inflammation and keep your skin strong and healthy. Vitamin A promotes healthy skin growth. They don’t call it a “glowing green” for nothing! (Tip: Kale is a cruciferous vegetable, which means it’s packed with fiber. In order to reap all the benefits, it’s important to break down its tough barrier by massaging the leaves with an acidic dressing, such as the one below, before serving. Don’t be afraid to get your hands dirty!)
Walnuts:
The Vitamin B found in brain-friendly walnuts helps manage stress and prevent skin disorders, which in turn keep fine lines and wrinkles at bay.

Jalapeño:
This powerful chili has more than a day’s worth of Vitamin C, which boosts healthy tissue repair. Another powerful antioxidant, the mighty jalapeño fights off free radicals, which keeps your skin looking younger.
Endive:
A great source of Vitamin E, endive helps to maintain moisture in the skin, promoting smooth, even skintone and texture. Endives are also beneficial for fighting acne by detoxifying and cleaning out the internal system.
Recipe
(Serves 4)
Salad Ingredients
2 cups of chopped Italian kale (without stem; only use the leaves)
2 cups of chopped curly kale (use only leaves)
1 cup of chopped endives (to cut the bitterness of the kale)
4 tablespoons of chopped sweet onion
Touch of minced jalapeño
3 tablespoons of pomegranate seeds
3 tablespoons chopped raw walnuts

4 tablespoons of cold pressed organic olive oil
2 tablespoons of fresh juiced organic lemon
2 tablespoons of chopped shallots
2 teaspoons of Dijon mustard
4 tablespoons of apple cider vinegar
Sea salt/pepper to taste
Combine all salad ingredients in one bowl. Separately mix the salad dressing and then massage the dressing into the kale using your hands. Before serving, top with additional pomegranate seeds and raw walnuts.
