They don’t call it a “glowing green” for nothing! (Tip: Kale is a cruciferous vegetable, which means it’s packed with fiber. In order to reap all the benefits, it’s important to break down its tough barrier by massaging the leaves with an acidic dressing, such as the one below, before serving. 2 cups of chopped Italian kale (without stem; only use the leaves)
2 cups of chopped curly kale (use only leaves)
1 cup of chopped endives (to cut the bitterness of the kale)
4 tablespoons of chopped sweet onion
Touch of minced jalapeño
3 tablespoons of pomegranate seeds
3 tablespoons chopped raw walnuts
4 tablespoons of cold pressed organic olive oil
2 tablespoons of fresh juiced organic lemon
2 tablespoons of chopped shallots
2 teaspoons of Dijon mustard
4 tablespoons of apple cider vinegar
Sea salt/pepper to taste
Combine all salad ingredients in one bowl. Separately mix the salad dressing and then massage the dressing into the kale using your hands. Before serving, top with additional pomegranate seeds and raw walnuts.
